Sorry for being MIA folks, I’ve been busy moving into my new place! It’s all mine too so that should mean more awesome recipes for all!
These are the very first thing I baked when I got here… Banana blueberry muffins with NO egg! Yay vegan friendly!

What you need
: a big ol bowl, a mixing spoon, a muffin tin (and maybe liners if you do that), an airtight container

Ingredients:
2C AP flour
1/3C brown sugar
1/2tsp ground cinnamon
2tsp baking powder
1tsp baking soda
4 medium-large mashed bananas
1 capful vanilla extract
1 cup frozen blueberries

What to do:
Preheat your oven to 350F. Lightly grease a muffin pan or line it with paper muffin cups. (greasing is better)
In your large ol bowl mix your dry ingredients. If your bananas are more firm than ripe you may need to heat them slightly and then mash in a separate bowl before adding them to your dry mix.
Add in your vanilla and your blue berries once you have a gluey texture. Don’t mix too much at this point – you want to keep your blueberries as in tact as possible.
Scoop your mix jnto your muffin pan, filling to just about the edges.
Bake for about 15 mins. You’ll know they are done when a toothpick inserted in the middle one comes out clean or when the tops “bounce back” when you press lightly on them.
Let cool to room temp on a cooling rack and then store in your airtight contatiner.

Caets suggestions:
If the mix isn’t quite as creamy as you would like, add a teaspoon of plain or vanilla yogurt to make it the right consistency. In a pinch, you can also use almond or soy milk.
Smaller bananas? Try adding 1/2cup unsweetened applesauce. The banana taste will overpower it and you won’t even notice at all!
These guys can be frozen for up to 4mths. Of course, they are too yummy to last that long!
